The other morning I roasted a mix of veggies that included
pepperoni rossi (red peppers), patate (potatoes), cipolla (onions), basilica (basil),
zucchini, melanzane (eggplant), and pomodorini (small tomatoes). I was sure to
cook a lot of it so that I could use it different ways. Today, I used the mix
at lunch over fresh pasta, and tonight I used the same mix with buffalo
mozzarella over top of a panino (small roll).
