After lunch today I prepared my dinner and lunch for
tomorrow. I made Pugliese sausage with a vegetable medley of tomatoes, onions,
garlic, eggplant, zucchini, red pepper and potatoes with salt, basil and olive
oil. The key to the whole thing is the potatoes. They soak up the flavor and
are delicious morsels whenever I bite into one. Tomorrow I’ll cook up a little
pasta and mix it with the sausage and vegetables for a delicious lunch.
